Whole-Wheat Banana Muffins
1 cup whole wheat flour
1/2 cup old fashioned oats
3/4 t. Baking soda
1/2 t. Salt
1/4 t. Baking powder
2 eggs
1/2 cup minus 1 T. organic coconut oil
1/3 cup honey
2 very ripe bananas
1 t. Vanilla
Optional add-ins: walnuts, chocolate chips, raisins, whatever you want!
1) preheat oven to 350 degrees, and prepare your muffin pan (spray with non-stick spray, or line with muffin paper).
2) In a large bowl, whisk together flour, oats, baking soda, salt, and baking powder. Make a well in the center, and drop in eggs, coconut oil, and honey. Mix just until it comes together, NO MORE!
3) Mash bananas and CAREFULLY fold in with vanilla and any add-ins. Pour into muffin pan and bake until toothpick comes out clean- about 20-22 minutes.
Yield: 12 deliciously large muffins

100% ARIEL's Healthy Banana Carrot Muffins
Guys! I invented something! (In the art world they say if you change like, 20% of someone else's work you can take the credit...so I guess I have invented a lot of dishes, but this one I changed so much of the original recipe that I can truthfully say it is 99.27% mine.)
They are moist, and healthy! But I do need to warn you. If you are looking for a muffin recipe that is basically cake with a healthier title, than this one isn't for you. I'm talking about muffins like those chocolate-chocolate chip wonders from Costco...not that I don't love those too..but for those moments when you want something you won't feel guilty about, this is a good recipe.
Ingredients:
1 cup of oats (I always use old fashioned, but it would work fine with quick, I'm sure)
1 cup of whole wheat flour
1.5 t. baking soda
.5 cup brown sugar
1 t. salt
.5 t. cinnamon
1 egg
1 cup buttermilk (I just soured regular milk by adding a little vinegar)
1 medium banana, mashed
2 medium carrots grated
raisins or nuts (optional)
Mix all dry ingredients together. Mix all wet ingredients. Add wet to dry and mix just until moistened, but still lumpy. Gently fold in carrots, raisins, nuts or other add-in. Pour into greased muffin tins. Bake 20 minutes at 400 degrees. Makes 12 muffins.
Yum! One plus of making healthy muffins is that you can pile on the butter! :)
Max even ate them, and he is super picky! (Okay, but I am pretty sure he just licked off the butter...)
I LOVE Biscuits and Gravy
Seriously. It is probably my favorite food, ever. I could eat it every day. My husband loves it too, and for 2 years I really struggled to get them just right, but now I don't even use a recipe and they turn out perfect. I just make simple buttermilk biscuits (2 cups flour, 3 t. baking powder, 1/2 t. baking soda, 1/2 t. salt, 1/2 cup butter or shortening, 1/2-3/4 cup buttermilk) The secret? For the biscuits: Mix the dry ingredients, then cut in cold butter or shortening until it is in coarse lumps, then gently mix in the buttermilk, and don't touch it. Do NOT over mix. Resist all urges. You can do it! It will make your biscuits flaky and lovely rather than tough and nasty. I also never use buttermilk...I just pour a little vinegar into the measured milk.
For the Gravy: I cook the sausage, sprinkle in about 1/4 cup of flour, mix it in so I can't see it, then I keep adding as much flour as I dare, about 1/4 cup more. Then, just fill the pot with milk, keep your heat on medium and keep stirring. Once it starts to thicken, I add a pinch of salt and pepper. Be patient, it will get thick. Thick gravy makes this meal!
AND, here is an awesome carrot cake I made for my husband's birthday. It was on of THE BEST cakes I have ever had (meaning it was an easy recipe, not that I am an amazing baker)

Homemade Hot Pockets!
Getting tired of taking the same ol' sandwich to work? Does your spouse or child complain about the lunches you pack them? Do you love quick microwave friendly meals, but hate how expensive and unhealthy they are?
Then, you, my friend are at the right place.
Making hot pockets, or a Colezone, as we like to call them (get it :) )
is simpler than it sounds. In fact, I often use left overs as filling, so it's a great way to clean out your fridge and make a great portable snack.
You can use ANY dough as the bread part. Pizza dough is super quick and easy, but my husband's favorite is italian bread. It is denser, but oh so buttery and spongey. Plus the egg whites brushed on the outside and the classic sliced top make it look beautiful!
Here's what you need:
1) Dough
2) A rolling pin (I guess you could use your hands too)
3) Some sort of filling. Our favorites so far are: broccoli, ham and cheese; pulled pork (cooked the day before in the slow cooker. Yum!), pizza style (sauce, mozzarella, meat..). I've also used left over shepherd's pie, and I am sure a variety of other left overs would also work great. Get creative!
Here's what you do:
1) Roll out baseball sized portions of the dough into 1/4" thick circles.
2) Place filling in center and roll up cinnamon roll style.
3) Let rise a second time (only needed with bread dough..not pizza dough)
4) Bake
5) Freeze or enjoy!
Seriously. It's that simple. Make these for your kiddos, and you'll be the most popular parent in the world. My husband has been taking them to work for 6 weeks now, and he gets envious looks and compliments (to the chef!) everyday. Plus, you are saving a TON of money. You can make them as quick and simple (pizza dough) or time consuming as you want. Make it your own and be creative. Lunch time doesn't have to be take-out or a squished sandwich!
